The Warriors followed up their first-leg win at Hampden with a convincing 21-3 triumph at Murrayfield, where scrum-half Dobie crossed for two tries.
Speaking to BBC Scotland, Dobie said: "I'm delighted to win the cup, and it's a bit sweeter this year after the last couple of seasons. We'd lost the fixture at Murrayfield before but still managed to win the cup.
"To win both legs this year, last week and again this week, makes it even more special, so I'm absolutely delighted for everyone involved.
"Both teams know each other so well, individually and collectively, and it was another really attritional game. Our forwards put in a huge shift and deserve a lot of credit.
"That hard work gave us a bit more space towards the end, we managed to pull away slightly, and it was great to come away with four massive league points.
"It's a brilliant way to finish the year. It's been a long season with a lot of matches, but ending it with two derby wins is huge."
